Chicken Fried Chicken

    Prepare the Chicken

    Flatten the chicken breasts to an even thickness with a meat mallet. This helps them cook evenly.

    Marinate the Chicken

    In a bowl, combine buttermilk, eggs, salt, black pepper, garlic powder, and paprika. Add the chicken breasts and marinate for at least 30 minutes.

    Coat the Chicken

    In a shallow dish, place the flour. Remove the chicken from the marinade, letting excess drip off, and dredge in the flour, coating thoroughly.

    Fry the Chicken

    Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Peel and chop the potatoes into quarters. Place them in a large pot and cover with cold water.

Chicken Gravy
