Prepare Chicken

    Season the Chicken

    Rub the Cajun seasoning evenly on both sides of the chicken breasts.

    Cook the Chicken

    In a skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from heat and let them cool slightly before slicing.

Assemble Salad

    Prepare the Salad Base

    In a large mixing bowl, add the chopped romaine lettuce, halved cherry tomatoes, and sliced black olives.

    Add Cheese

    Sprinkle the shredded Cheddar and Monterrey Jack cheese over the salad base.

    Add Chicken and Tortilla Chips

    Slice the cooked chicken breasts and add them to the salad. Top with tortilla chips.

Serve

    Add Optional Toppings

    If desired, add spoonfuls of sour cream and salsa on top of the salad before serving.

    Toss and Serve

    Gently toss the salad to combine all ingredients and serve immediately.
