Preparation of Chicken

    Season the Chicken

    In a small bowl, mix the Cajun seasoning with olive oil to create a paste. Rub the seasoning mixture all over the chicken breasts, ensuring they are well coated.

    Cook the Chicken

    Heat a skillet over medium-high heat. Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

Assembling the Dish

    Prepare Tortilla Base

    On a large serving platter, spread the tortilla chips evenly across the bottom.

    Add Chicken and Toppings

    Slice the cooked chicken breasts and layer them on top of the tortilla chips. Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the chicken. Then add the diced tomatoes and sliced black olives.

    If desired, place the assembled platter under the broiler for 2-3 minutes until the cheese is melted and bubbly. Keep an eye on it to prevent burning.
