Crust Preparation

Preheat Oven
Preheat your oven to 325°F (160°C).

Mix Crust Ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated.

Form Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let cool.
Filling Preparation

Prepare Filling Ingredients
In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

Add Sugar and Sour Cream
Gradually add granulated sugar and sour cream to the cream cheese, mixing until fully combined.

Incorporate Vanilla
Stir in the vanilla extract until evenly distributed.

Add Eggs
Add eggs one at a time, mixing on low speed after each addition until just blended. Do not overmix.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.
Baking and Cooling

Bake Cheesecake
Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool the Cheesecake
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour.

Chill in Fridge
Remove from the oven, and let it cool to room temperature. Then cover and refrigerate for at least 4 hours, or overnight for best results.

Once chilled, carefully remove the sides of the springform pan. Slice and serve plain or with toppings of your choice.
