Prepare Chicken

Marinate the Chicken
In a bowl, combine olive oil, Cajun seasoning, garlic powder, salt, and black pepper. Add the chicken breasts and coat well. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Melt the Cheese
During the last minute of grilling, place a slice of Pepper Jack cheese on each chicken breast. Close the grill lid to melt the cheese.
Assemble Sandwich

Prepare the Buns
While the chicken is grilling, toast the brioche buns on a separate grill or in a toaster until golden brown.

Build the Sandwich
On the bottom half of each toasted bun, place a lettuce leaf, followed by the grilled Cajun chicken breast with melted cheese. Top with slices of tomato. If desired, drizzle Cajun sauce over the top before placing the other half of the bun on top.
