Cheddar Cheese Sauce Preparation

Make Roux
Once melted, add the flour to the pan and whisk continuously for about 1-2 minutes until it forms a roux.

Add Milk
Gradually whisk in the milk until the mixture is smooth and begins to thicken.

Add Cheese and Seasoning
Add the cheddar cheese, salt, and black pepper. Stir until the cheese is completely melted and the sauce is smooth. Remove from heat and set aside.
Bunless Burger Assembly

Cook the Beef
In a skillet, cook the ground beef over medium-high heat, seasoning with salt and pepper. Cook until browned and medium-well, about 6-8 minutes.

Prepare Vegetables
While the beef is cooking, chop the tomato, celery, and carrot sticks into serving sizes.

Toast Brioche Buns
In another skillet or toaster, lightly toast the brioche buns until golden brown.

Assemble the Burger
On the bottom half of each toasted brioche bun, place a portion of cooked beef. Drizzle with cheddar cheese sauce and sprinkle with chopped chives.

Add Toppings
Top with lettuce, tomato, onion, and sweet pickle slices. Cover with the top half of the bun.

Serve with Sides
Serve the bunless burger with cottage cheese, celery sticks, carrot sticks, and chips on the side.
