Preparing the Dough

    Activate Yeast

    In a small bowl, combine warm water, yeast, and brown sugar. Stir gently and let it sit for about 5-10 minutes until foamy.

    Mix Ingredients

    In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and mix until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface. Knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping the Pretzels

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Shape the Pretzels

    Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and shape into a pretzel.

    Boil the Pretzels

    In a large pot, bring 10 cups of water to a boil. Stir in the baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a greased baking sheet.
