Preparation

  1. 1

    Chop Vegetables

Finely chop the onion, garlic, bell pepper, carrot, and celery. Set aside.

Cooking

  1. 2

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, bell pepper, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 3

    Cook Turkey

Add the ground turkey to the pot. Cook, breaking it apart with a spoon, until it is browned and cooked through, about 7-10 minutes.

  3. 4

    Add Spices

Stir in the chili powder, cumin, paprika, salt, black pepper, and red pepper flakes. Cook for an additional 2 minutes to toast the spices.

  4. 5

    Add Tomatoes and Beans

Pour in the canned diced tomatoes (with juice), kidney beans (drained and rinsed), and black beans (drained and rinsed). Stir to combine.

  5. 6

    Add Broth and Corn

Add the chicken broth and corn to the pot. Stir well and bring the chili to a simmer.

  6. 7

    Simmer

Reduce heat to low and let the chili simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the better the flavor!
