Crust Preparation

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add the chilled, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing until the dough starts to come together. You may not need all the water.

    Form the Crust

    Turn the dough onto a floured surface and knead gently until smooth. Shape it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    Once chilled, roll out the dough on a floured surface to fit a 9-inch pie pan. Transfer the dough to the pie pan and trim the edges.

    Pre-bake the Crust

    Preheat the oven to 375°F (190°C). Prick the bottom of the crust with a fork to prevent bubbling. Bake for 10-15 minutes or until lightly golden. Remove from oven and set aside to cool.

Filling Preparation

    Prepare the Filling

    In a large bowl, whisk together the eggs and milk until well combined.

    Add Cheeses

    Stir in the shredded Monterrey Jack cheese, shredded Cheddar cheese, and Alouette cheese spread into the egg mixture until evenly distributed.

    Season the Mixture

    Add the black pepper, salt, and optional chopped chives to the mixture, stirring to combine.

    Combine and Pour

    Pour the cheese and egg mixture into the pre-baked crust, spreading it evenly.

Baking

    Bake the Quiche

    Bake the quiche in the preheated oven at 375°F (190°C) for 35-40 minutes, or until the filling is set and the top is lightly golden.

    Cool and Serve

    Once baked, remove the quiche from the oven and let it cool for 10 minutes before slicing. Serve warm with a side of fruit, soup, or salad.
