Crust Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add Water
Gradually add cold water, one tablespoon at a time, mixing until the dough just holds together. Do not overwork the dough.

Chill the Dough
Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Roll Out the Dough
On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie dish. Place the dough in the dish and trim the edges.

Preheat your oven to 375°F (190°C).

Sauté Onions and Spinach
In a skillet over medium heat, sauté the finely chopped onion until translucent. Add the fresh spinach and cook until wilted. Remove from heat and let cool.

Whisk Eggs and Cream
In a large bowl, whisk together the eggs, milk, heavy cream, salt, black pepper, and nutmeg until well combined.

Pour into Crust
Pour the filling into the prepared pie crust, spreading it evenly.

Bake the Quiche
Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top.
