Potato Pancake

    Prepare the Potatoes

    Peel and grate the Yukon Gold potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

    Mix Ingredients

    In a large bowl, combine the grated potatoes, all-purpose flour, eggs, chopped green onions, salt, and black pepper. Mix until well combined.

    Fry the Pancakes

    Heat oil in a large skillet over medium heat. Once hot, spoon about 1/4 cup of the potato mixture into the skillet, flattening it slightly with the back of the spatula. Cook for about 3-4 minutes on each side until golden brown and crispy. Repeat with the remaining mixture.

    Cook the Bacon

    In a skillet over medium heat, add the peppered pecan wood smoked bacon slices. Cook for about 5-7 minutes on each side, or until crispy. Drain on paper towels.

Pear Chutney

    Cook the Chutney

    In a saucepan over medium heat, combine the chopped pears, finely chopped onion, brown sugar, apple cider vinegar, grated ginger, cinnamon, and salt. Bring to a simmer and cook for about 20-25 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let cool.
