Method

Salad Preparation

  1. 1

    Prepare the Romaine Lettuce

Wash the Romaine lettuce thoroughly under cold water. Remove any damaged outer leaves and chop the lettuce into bite-sized pieces.

  2. 2

    Prepare the Cherry Tomatoes

Wash the cherry tomatoes and slice them in half. Set aside.

  3. 3

    Grate the Grana Padano

Using a grater, finely grate the Grana Padano cheese and set it aside for topping.

  4. 4

    Combine Salad Ingredients

In a large salad bowl, combine the chopped Romaine lettuce and halved cherry tomatoes. Toss gently to mix.

Dressing Preparation

  1. 5

    Prepare the Dressing

In a mixing bowl, whisk together the egg yolks, minced garlic, Dijon mustard, Worcestershire sauce, lemon juice, and salt until smooth.

  2. 6

    Emulsify the Dressing

Slowly drizzle in the olive oil while continuously whisking to create an emulsion. Continue whisking until the dressing is thick and creamy.

Croutons Preparation

  1. 7

    Preheat the Oven

Preheat your oven to 180°C (350°F).

  2. 8

    Prepare the Baguette

Cut the baguette into small cubes. In a mixing bowl, toss the bread cubes with olive oil, garlic powder, and salt until evenly coated.

  3. 9

    Bake the Croutons

Spread the bread cubes on a baking sheet and bake in the preheated oven for 10-15 minutes, or until golden and crispy. Stir halfway through to ensure even browning.

Final Assembly

  1. 10

    Toss the Salad

Pour the prepared dressing over the salad mixture and toss well to ensure all ingredients are evenly coated.

  2. 11

    Add Croutons and Cheese

Sprinkle the baked croutons and grated Grana Padano cheese on top of the salad.

  3. 12

    Season and Serve

Finish with a sprinkle of fresh black pepper and serve immediately.
