Method

Steak Preparation

  1. 1

    Prepare the Steak

Take the USDA Prime Striploin out of the refrigerator and let it come to room temperature for about 30 minutes. Preheat your grill to high heat.

  2. 2

    Season the Steak

Rub the steak with olive oil, then season generously with kosher salt and black pepper on both sides.

  3. 3

    Grill the Steak

Place the steak on the hot grill and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

  4. 4

    Make the Port Wine Reduction

In a saucepan, add the port wine and bring to a simmer. Reduce the wine until it thickens, about 10-15 minutes. Stir in the butter until melted and smooth. Remove from heat.

  5. 5

    Rest and Slice the Steak

Once done, remove the steak from the grill and let it rest for about 10 minutes before slicing against the grain.

Fries Preparation

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the fries in cold water for at least 30 minutes to remove excess starch.

  2. 7

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 8

    Fry the Potatoes

Drain and pat dry the soaked potatoes. Fry them in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels, then season with salt.

Tomato Salad Preparation

  1. 9

    Chop the Tomatoes

Cut the homegrown tomatoes into wedges or slices, depending on your preference.

  2. 10

    Combine Ingredients

In a large bowl, combine the sliced tomatoes, fresh basil leaves, balsamic vinegar, and olive oil. Toss gently to combine.

  3. 11

    Season

Season the salad with salt and pepper to taste. Serve immediately.
