Grits

    Prepare Grits

    In a medium pot, bring 4 cups of water to a boil. Add 1 cup of grits and stir well.

    Cook Grits

    Reduce heat to low and simmer for about 20 minutes, stirring occasionally until thickened.

    Mix in Cream Cheese

    Once the grits are thick, stir in 4 oz of cream cheese and 2 tablespoons of butter. Season with 1 tsp of salt.

Shrimp

    Prepare Shrimp

    Peel and devein 1 lb of Mayport White Shrimp, then pat dry with paper towels.

    Cook Shrimp

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 cloves of minced garlic and sauté for 1 minute.

    Add Shrimp

    Add the shrimp, 1 teaspoon of paprika, and season with salt and black pepper to taste. Cook for 3-4 minutes until shrimp are pink and cooked through.

Roasted Hog Broth

    Prepare Broth Ingredients

    In a large pot, add 2 lbs of hog bones, 1 chopped onion, 1 chopped carrot, 1 chopped stalk of celery, 4 cloves of crushed garlic, and 2 bay leaves.

    Add Water

    Pour in 8 cups of water and bring to a boil.

    Simmer Broth

    Reduce heat and let it simmer for 2-3 hours. Strain the broth through a fine mesh sieve and discard solids.

Tobacco Onions

    Prepare Onions

    Thinly slice 1 onion and soak in cold water for 30 minutes.

    Dust with Flour

    Drain the onions and toss them in 1 cup of flour mixed with 1 tsp of paprika and salt to taste.

    Fry Onions

    Heat oil in a frying pan and fry the coated onions until golden brown and crispy. Drain on paper towels.
