Preparing the Fish

    Sprinkle the Dover sole fillets with salt and white pepper on both sides. Drizzle with lemon juice and set aside to marinate for about 15 minutes.

    In a large pot, combine the water, white wine vinegar, bay leaves, and black peppercorns. Bring the mixture to a gentle simmer over medium heat.

    Carefully place the seasoned Dover sole fillets into the simmering poaching liquid. Allow the fish to poach for 4-5 minutes until cooked through and opaque. Remove the fillets gently with a slotted spoon and place on a warm plate.

Making the Caviar Butter Sauce

    In a saucepan, melt 1/2 cup of unsalted butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.
