Salad Preparation

Prepare the Gem Lettuce
Wash the Gem Lettuce under cold water, gently pat dry with a clean towel, and tear into bite-sized pieces. Place in a large salad bowl.

Add the Golden Raisins
Sprinkle the Golden Raisins over the lettuce and onion.
Goat Cheese Preparation

Prepare the Goat Cheese
Cut the Baetje Farm Goat Cheese into rounds or small squares.

Prepare the Pecans
Chop the Pecans coarsely and place them in a shallow dish.

Fry the Goat Cheese
In a skillet, heat enough oil to cover the bottom over medium heat. Once hot, add the coated Goat Cheese and fry until golden brown on both sides, about 2-3 minutes per side. Remove and place on paper towels to drain.
Dressing Preparation

Make the Dressing
In a small bowl, whisk together the Tomato Chutney, Olive Oil, Red Wine Vinegar, Honey, Salt, and Black Pepper until well combined.
Assembly

Combine and Serve
Drizzle the dressing over the salad base (lettuce, onion, and raisins) and toss gently to coat. Top with the fried Goat Cheese pieces and serve immediately.
