    Prepare the Bruschetta Topping

    Dice the Roma tomatoes and place them in a bowl. Add finely chopped fresh basil, minced garlic, olive oil, salt, and black pepper. Mix well and set aside for flavors to meld.

    Prepare the Bread

    Slice the loaf of bruschetta bread into 1/2 inch thick slices. Toast the bread in an oven at 400°F (200°C) for 5-7 minutes until golden brown.

    Assemble and Serve

    Top each toasted slice with the bruschetta mixture. Drizzle with a little extra olive oil if desired and serve immediately.

    Marinate the Chicken

    In a bowl, mix together the juice of 2 lemons, chopped fresh rosemary, minced garlic, olive oil, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.

    Heat a grill or grill pan over medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side or until cooked through and juices run clear.
