Method

Preparation

  1. 1

    Prepare the Marinade

In a medium bowl, combine the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Whisk together until well combined.

  2. 2

    Marinate the Fish

Place the fish fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fish, ensuring each fillet is well coated. Cover the dish or seal the bag, then refrigerate for at least 30 minutes to 2 hours for maximum flavor.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 450°F or 190°C to 230°C). If using a charcoal grill, ensure the coals are evenly heated.

  2. 4

    Grill the Fish

Remove the fish from the marinade and let any excess marinade drip off. Place the fillets on the grill. Grill for about 4-6 minutes per side, or until the fish flakes easily with a fork and has a nice char. Adjust cooking time based on the thickness of the fillets.

  3. 5

    Check for Doneness

The fish is done when it reaches an internal temperature of 145°F (63°C) or when it flakes easily with a fork. Avoid overcooking to retain moisture.

  4. 6

    Serve

Remove the fish from the grill and let it rest for a few minutes. Serve garnished with lemon wedges and fresh herbs, if desired.
