    Clean the Oysters

    Rinse the fresh oysters under cold running water to remove any sand or debris. Carefully shuck the oysters, discarding the top shell, and place them in a bowl.

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Whisk together until well combined.

    Mix Wet Ingredients

    In another bowl, beat the egg and add the milk. Mix well to combine.

    Combine Batter

    Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick and somewhat lumpy.

Frying

    Heat the Oil

    In a large, deep pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Oysters

    Using tongs, dip each oyster into the batter, ensuring it is fully coated. Let any excess batter drip off.

    Fry the Oysters

    Carefully place the coated oysters in the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy.
