    Season the Steaks

    Take the filet mignon steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes. Pat them dry with paper towels, then generously season both sides with salt and black pepper.

    Prepare the Pan

    Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat. Once hot, add olive oil and swirl to coat the pan evenly.

    Sear the Steaks

    Place the seasoned filet mignon steaks in the hot pan. Sear for about 4-5 minutes without moving them, until a golden-brown crust forms on the bottom.

    Flip and Cook

    Flip the steaks using tongs, and continue cooking for another 4-5 minutes for medium-rare doneness. Adjust cooking time to your preference.

    Add Toppings (Optional)

    If desired, add butter, fresh rosemary, and crushed garlic cloves to the pan in the last 2 minutes of cooking. Baste the steaks with the melted butter for added flavor.

    Remove the steaks from the pan and transfer them to a plate. Tent loosely with foil and let them rest for about 5-10 minutes to allow the juices to redistribute.
