    Prepare the Filets

    Remove the filet mignon from the refrigerator and allow them to come to room temperature for about 30 minutes before cooking. This helps them cook evenly.

    Season the Filets

    Pat the filets dry with paper towels. Rub both sides of each filet with olive oil, then season generously with kosher salt and black pepper.

    Prepare Garlic and Thyme

    Mince the garlic cloves and set aside. Rinse the thyme sprigs and set aside for use later.

Cooking

    Preheat the Pan

    Heat a cast-iron skillet or heavy pan over high heat until very hot, about 5 minutes.
