For the Crispy Fried Oyster Mushrooms

    Prepare the mushrooms

    Clean the oyster mushrooms and remove any tough stems. Tear the mushrooms into bite-sized pieces.

    Set up the dredging station

    In one bowl, add the all-purpose flour mixed with salt, black pepper, and paprika. In a second bowl, beat the egg. In a third bowl, add the cornmeal.

    Dredge the mushrooms

    Dip each piece of mushroom first in the flour mixture, then in the beaten egg, and finally coat it with cornmeal.

    Heat the oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

    Fry the mushrooms

    Carefully add the coated mushrooms to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

For the Braised Collard Greens

    Sauté the aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute.

    Add collard greens

    Add the chopped collard greens to the pot and stir to combine.

    Add broth and seasonings

    Pour in the vegetable broth and add salt, black pepper, and red pepper flakes. Bring to a simmer.

    Braised the greens

    Cover the pot and let the collard greens cook for about 30-35 minutes, stirring occasionally, until soft and tender.

For the Smoke Oyster Aioli

    Blend the aioli ingredients

    In a food processor, combine the mayonnaise, drained smoked oysters, minced garlic, and lemon juice. Blend until smooth.

    Season the aioli

    Season with salt and black pepper to taste, blending again briefly to combine.
