Pie Crust

Prepare the Pie Crust
In a large mixing bowl, combine the flour, sugar, and salt. Mix well.

Cut in Butter
Add the cold butter, cut into small cubes, and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add the ice water, mixing until the dough just comes together. Do not overwork the dough.

Chill the Dough
Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apples
In a large bowl, combine the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract. Toss until apples are well-coated.

Let the Filling Rest
Allow the apple mixture to sit for about 10 minutes to let the juices combine.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Add the Filling
Pour the apple filling into the pie crust, spreading it evenly.

Top the Pie
Roll out the second disk of dough and place it over the filling. Trim and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.

Brush and Sprinkle Topping
Melt the butter and brush it over the top crust. Sprinkle with milk and granulated sugar.

Bake the Pie
Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Remove the pie from the oven and let it cool for at least 2 hours before serving. Serve with vanilla ice cream if desired.
