French Toast Base

Crème Brûlée Sauce

Raspberry Melba Sauce

Preparation

Prepare French Toast Base

1. Soak the Bread

In a large mixing bowl, whisk together the eggs, milk, heavy cream, vanilla extract, granulated sugar, ground cinnamon, and salt until well combined.

2. Combine with Bread

Place the brioche slices into the mixture, ensuring that all slices are submerged. Let them soak for 15-20 minutes.

Make Crème Brûlée Sauce

3. Prepare the Custard

In a saucepan, combine the granulated sugar and egg yolks. Whisk until pale and creamy.

4. Infuse Vanilla

Split the vanilla bean lengthwise, scrape the seeds into the egg mixture, and add the bean pod as well. Gradually add the heavy cream to the mixture, whisking constantly.

5. Cook the Sauce

Heat the mixture over medium-low heat, stirring continuously until it thickens slightly. Remove from heat and strain through a fine mesh sieve. Allow to cool.

Prepare Raspberry Melba Sauce

6. Cook the Raspberries

In a saucepan, combine fresh raspberries, granulated sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, around 10 minutes.

7. Blend the Sauce

Remove from heat, and blend the sauce until smooth. Strain through a fine mesh sieve to remove seeds, if desired.

Cook French Toast

8. Heat the Griddle

Preheat a non-stick skillet or griddle over medium heat and lightly grease it.

9. Cook the Toast

Place soaked brioche slices on the griddle and cook for about 3-4 minutes on each side or until golden brown.

Assemble and Serve

10. Plate the French Toast

Stack the cooked French toast on a serving plate. Drizzle with the crème brûlée sauce.

11. Add Toppings

Top with fresh mixed berries and a drizzle of raspberry melba sauce. Dust with powdered sugar before serving.
