Method

Cake Directions

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the softened butter and granulated sugar (1.5 cups) together until light and fluffy. This should take about 3-5 minutes using an electric mixer.

  4. 4

    Add Eggs and Flavorings

Add the eggs one at a time, mixing well after each addition. Then add the lemon zest, lemon juice (0.5 cups), and vanilla extract, mixing until well incorporated.

  5. 5

    Combine Wet and Dry Mixtures

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.

  6. 6

    Bake the Cake

Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool the Cake

Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Lemon Drizzle Directions

  1. 8

    Prepare the Drizzle

In a small bowl, mix together the granulated sugar (0.5 cups) and lemon juice (0.25 cups) until the sugar is dissolved.

  2. 9

    Drizzle on Cake

Once the cake is completely cooled, poke small holes in the top of the cake with a toothpick or fork. Pour the lemon drizzle over the top, allowing it to soak in.

  3. 10

    Serve

Let the cake sit for at least 15 minutes to absorb the drizzle before slicing and serving.
