Pasta and Chicken
Alfredo Sauce
Method
Cooking the Pasta and Chicken
- 1
Cook the Fettuccine
In a large pot of boiling salted water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
- 2
Cook the Chicken
Season the chicken breasts with salt and black pepper. In a large skillet over medium heat, add a little oil. Cook the chicken for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from skillet and let it rest before slicing into strips.
- 3
Blanch the Broccoli
In the same pot of boiling water used for the pasta, add the broccoli florets and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
Making the Alfredo Sauce
- 4
Prepare the Sauce
In a saucepan over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer.
- 5
Add Cheese and Seasoning
Gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and black pepper to taste.
Combining and Serving
- 6
Combine Ingredients
In a large bowl, combine the cooked fettuccine, sliced chicken, and blanched broccoli. Pour the Alfredo sauce over the mixture and toss gently until everything is well coated.
- 7
Serve
Divide among plates and serve immediately. Optionally, garnish with extra Parmesan cheese and freshly cracked black pepper.
