Cut the boneless, skinless chicken breasts into strips about 1 inch wide. Season the chicken strips with salt and black pepper, ensuring they are evenly coated.

In three separate shallow bowls, set up the breading station: In the first bowl, add the all-purpose flour. In the second bowl, whisk together the eggs and milk until smooth. In the third bowl, combine breadcrumbs, garlic powder, onion powder, and paprika.

Bread the Chicken Strips
Take each chicken strip and first coat it in the flour, shaking off any excess. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, coat it in the breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere well.

Fry the Chicken Fingers
In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot (you can test it by dropping a small piece of bread into the oil; it should sizzle), carefully add the breaded chicken strips in batches, making sure not to overcrowd the pan. Fry until golden brown and cooked through, about 4-5 minutes per side. Use a slotted spoon to remove them and drain on paper towels.
