Dough Preparation

    Activate Yeast

    In a small bowl, mix warm water (3 ml) with sugar (1 tsp) and sprinkle the active dry yeast (1 tsp) over the top. Let it sit for about 5-10 minutes until it becomes frothy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour (2 cups) and salt (1 tsp). Create a well in the center and add the activated yeast mixture and olive oil (2 tbs). Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Mix Filling

    In a mixing bowl, combine shredded cheddar cheese (1 cup), shredded mozzarella cheese (1 cup), Italian seasoning (1 tsp), and black pepper (1 tsp). Mix well until evenly combined.

Calzone Assembly

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Shape Calzones

    Once the dough has risen, punch it down and divide it into 2 equal portions. Roll each portion into a circle about 8 inches in diameter on a floured surface.

    Add Filling

    Place half of the cheese filling mixture on one half of each dough circle, leaving a border around the edge.

    Seal Calzones

    Fold the dough over to cover the filling, creating a half-moon shape. Press the edges together to seal, then crimp with a fork for a decorative edge.

    Prepare Egg Wash

    In a small bowl, whisk together the egg (1 whole) and water (1 tbs). Brush the egg wash over the tops of each calzone.

    Bake Calzones

    Place the calzones on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes, or until golden brown.

Serving

    Remove the calzones from the oven and let them cool for a few minutes before slicing. Serve warm with marinara sauce for dipping if desired.
