Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Combine Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt until well combined.

Combine Mixtures
Gradually add the wet mixture to the dry mixture, stirring until just combined.

Add Carrots and Nuts
Fold in the grated carrots and chopped nuts (if using) until evenly distributed.

Bake the Cake
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake
Remove from the oven and let the cakes cool in the pans for 10 minutes. Then turn them out onto wire racks to cool completely.

Prepare the Frosting
In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.

Gradually add the powdered sugar and vanilla extract, mixing until the frosting is fluffy and well combined.

Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second layer on top and frost the top and sides of the entire cake.
