Dough Preparation

    Mixing Ingredients

    In a large bowl, whisk together the flour, sugar, cinnamon, and salt. Make a well in the center and add the egg, white wine (or vinegar), and melted butter.

    Kneading the Dough

    Mix until a dough forms. Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Rolling and Shaping

    After resting, divide the dough into small pieces. Roll each piece out thinly, about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter).

    Wrapping around Cannoli Forms

    Wrap each circle around a cannoli form, sealing the edges with a bit of water. Make sure the dough is tightly wrapped.

Frying

    Heating Oil

    In a deep frying pan, heat the oil over medium heat until it reaches 350°F (175°C).

    Frying Cannoli

    Carefully place the wrapped forms into the hot oil, frying until golden brown, about 2-3 minutes. Remove from oil and drain on paper towels.

    Cooling

    Let the cannoli cool for a few minutes before removing the forms. Gently twist to release.

Filling Preparation

    Mixing the Filling

    In a medium bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Adding Chocolate Chips

    Fold in the chocolate chips and chopped pistachios if using.

    Filling the Cannoli

    Using a piping bag or a small spoon, fill each cooled cannoli shell with the ricotta filling.
