Wings
Buffalo Sauce
Method
Preparing the Wings
- 1
Clean the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.
- 2
Season the Wings
In a large bowl, combine the all-purpose flour, salt, black pepper, garlic powder, and paprika. Dredge each wing in the flour mixture, shaking off the excess.
- 3
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Fry the Wings
Carefully add the wings to the hot oil in batches and fry for about 8-10 minutes, or until golden brown and crispy. Remove them with a slotted spoon and place on a wire rack or paper towels to drain excess oil.
Preparing the Buffalo Sauce
- 5
Melt the Butter
In a small saucepan over low heat, melt the unsalted butter.
- 6
- 7
Heat the Sauce
Increase the heat slightly and let the sauce simmer for about 2-3 minutes, stirring occasionally. Remove from heat.
Tossing the Wings
- 8
Combine Wings and Sauce
In a large bowl, add the hot fried wings and pour the buffalo sauce over them. Toss until the wings are evenly coated.
- 9
Serve
Transfer the wings to a platter and serve immediately, with celery sticks and blue cheese dressing on the side if desired.
