Preparing the Filo Pastry

Thaw Filo Pastry
If using frozen filo pastry, remove it from the freezer and allow it to thaw in the refrigerator overnight or at room temperature for about 2 hours.

Prepare Baking Dish
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with some melted butter.

Mix Nuts and Spices
In a bowl, combine the chopped walnuts, chopped almonds, and ground cinnamon. Mix well to ensure the spices are evenly distributed.
Assembling Baklava

Add Nut Filling
Spread a layer of the nut mixture evenly over the layered filo in the baking dish. Add 4-5 more layers of filo, brushing melted butter between each layer. Repeat the layering of nuts and filo until all filling and pastry are used, finishing with a top layer of filo.

Cut Baklava
Using a sharp knife, cut the assembled baklava into diamond or square shapes before baking. This will help with even cooking and easier serving.

Bake in the preheated oven for 45-50 minutes, or until the baklava is golden brown and crisp.

Pour Syrup
Once the baklava is done baking, remove it from the oven and immediately pour the warm syrup over it, ensuring that it seeps into the cuts and layers.
