Cook the Pasta
Bring a large pot of salted water to a boil. Add the strozzapreti pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the chicken sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add Nduja and Tomatoes
Stir in the nduja and cook for another 2 minutes until it melts. Then add the crushed tomatoes, salt, and black pepper. Simmer for 10 minutes, stirring occasionally.

Combine Pasta and Sauce
Add the drained strozzapreti pasta to the skillet along with the ricotta. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.

Finish with Cheese and Basil
Stir in half of the grated pecorino cheese and fresh basil leaves. Adjust seasoning with salt and black pepper if needed.

Serve
Plate the pasta and top with the remaining pecorino cheese and additional basil leaves for garnish. Serve warm.
