    Prepare the Steak

    Remove the dry aged strip steaks from the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

    Sear the Steak

    In a large skillet, heat the olive oil over high heat. Once hot, add the steaks and sear them for about 4-5 minutes on each side for medium-rare, depending on thickness. Use tongs to flip the steaks.

    Add Garlic Butter

    In the last 2 minutes of cooking, add the garlic cloves, butter, and thyme to the skillet. Baste the steaks with the melted garlic butter using a spoon.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for about 10 minutes, loosely covered with foil.

    Make the Jus

    In the same skillet, add the beef stock and bring to a simmer, scraping up any browned bits from the bottom of the pan. Reduce the liquid by half to concentrate the flavors.

    Serve

    Slice the steak against the grain and serve with the garlic butter drizzled on top and the natural jus on the side.
