    Prepare the cake batter

    Preheat the oven to 350°F (175°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the eggs, then add the olive oil, milk, vanilla extract, and lemon zest. Mix well.

    Pour the wet ingredients into the dry ingredients and mix until just combined. Pour the batter into a greased 9-inch round cake pan and bake for 30-35 minutes until a toothpick comes out clean. Let it cool before serving.

Blackberry Sauce

    Make the blackberry sauce

    In a saucepan over medium heat, combine blackberries, sugar, and lemon juice. Cook until the blackberries break down and the mixture thickens, about 10 minutes. Strain the sauce through a fine mesh sieve and set aside.

Sweet Corn Ice Cream

    Prepare the ice cream base

    In a blender, puree sweet corn kernels with heavy cream. Strain the mixture through a fine sieve into a saucepan. Add whole milk, sugar, salt, and heat gently.

    In a separate bowl, whisk the egg yolks and temper them with the warm corn mixture. Return to heat and cook until thickened. Chill and churn in an ice cream maker according to manufacturer instructions.

Pistachio Brittle

    In a saucepan, combine sugar, corn syrup, and salt. Cook until the mixture reaches 300°F (hard crack stage). Stir in the pistachios and pour onto a greased baking sheet. Let it cool and break into pieces.
