Fit Turkey Wrap

Heat 5 gallons of water to 165°F (74°C). Add the Pale Malt and Crystal Malt to the water and maintain the temperature at 152°F (67°C) for 60 minutes, stirring occasionally.

Mashing

After mashing, sparge the grains with 170°F (77°C) water until you collect about 6.5 gallons of wort in the brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add the Citra hops and boil for 60 minutes. Add Mosaic hops with 15 minutes left, and Simcoe hops with 5 minutes left in the boil.

Boiling

Cool the wort quickly to about 70°F (21°C) using a wort chiller.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock and ferment at 68°F (20°C) for 1-2 weeks.

Fermentation

After fermentation is complete, transfer the beer to a bottling bucket, adding priming sugar if desired. Bottle and cap the beer, then let it carbonate for 1-2 weeks at room temperature.
