Preparation Steps
1. Make the Chicha Morada Base
In a large pot, combine the purple corn and water. Bring to a boil, then reduce heat and simmer for about 30 minutes until the water is a deep purple color.
2. Add Flavorings
Add the pineapple chunks, lime juice, sugar, cloves, and cinnamon stick to the pot. Simmer for another 15 minutes, stirring occasionally.
3. Strain the Mixture
Remove the pot from heat and strain the mixture through a fine mesh sieve into a large bowl or pitcher to remove the solids.
4. Cool the Base
Let the strained liquid cool to room temperature, then refrigerate until chilled.
5. Combine with Carbonated Water
Once chilled, mix the chicha morada base with the carbonated water in a large pitcher. Stir gently to combine.
6. Serve
Serve the chicha morada in glasses over ice, garnished with fresh mint leaves.
