Prepare the French Fries

Fry the Potatoes
Peel and cut the potatoes into fry shapes. Heat olive oil in a frying pan over medium-high heat. Add the fries and cook until golden brown and crispy, about 15-20 minutes, turning occasionally. Season with salt. Remove from pan and drain on paper towels.
Cook the Garlic Rice

Prepare the Rice
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add rice and stir for another 2 minutes. Pour in water, bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes or until rice is tender and water is absorbed. Fluff with a fork.

Cook the Mushrooms
In a large skillet, heat olive oil over medium-high heat. Add sliced red onion and sauté until translucent. Add minced garlic and stir for another minute. Add sliced mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Add chopped tomatoes and tamari sauce, stirring well to combine. Cook for another 3-5 minutes until heated through.
