Make the Dough
In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. In a separate bowl, beat the egg and mix with cold water. Add to the flour mixture and mix until a dough forms. Knead gently on a floured surface until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Assemble the Empanadas
Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles (about 4-6 inches in diameter). Place a spoonful of filling in the center of each circle. Fold the dough over to create a half-moon shape, sealing the edges with a fork. Place on a baking sheet lined with parchment paper.

Bake the Empanadas
Bake in the preheated oven for 25-30 minutes or until golden brown. Remove from the oven and let cool slightly.
