    Prepare the Cauliflower

    Preheat your grill to medium-high heat. Cut the cauliflower into thick steaks. Brush both sides of the cauliflower steaks with olive oil and season with salt.

    Grill the Cauliflower

    Place the cauliflower steaks on the grill and cook for about 5-7 minutes on each side or until they are tender and have nice grill marks.

    Make the Garbanzo Puree

    In a food processor, combine the cooked garbanzo beans, tahini, minced garlic, lemon juice, and a pinch of salt. Blend until smooth, adding water as needed to reach a creamy consistency.

    Prepare the Puttanesca Sauce

    In a bowl, mix together the chopped botija olives, capers, and crushed red pepper flakes to make the puttanesca sauce.

    Serve

    On a plate, spread a generous amount of the garbanzo puree, place the grilled cauliflower steak on top, and drizzle with the botija olive puttanesca. Finish with a sprinkle of cancha on the side.
