Preparing the Ammoglio Sauce

    Make the Ammoglio Sauce

    In a bowl, combine minced garlic, chopped parsley, red pepper flakes, red wine vinegar, and olive oil. Season with salt and black pepper to taste. Mix well and let it sit while you prepare the calamari.

Frying the Calamari

    Prepare the Calamari

    In a mixing bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. Toss the calamari rings in the flour mixture until evenly coated.

    Heat the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Fry the Banana Peppers

    In the same oil, fry the sliced banana peppers for about 1-2 minutes until they are crispy. Remove and drain on paper towels.

    Serve

    Serve the fried calamari hot, garnished with the crispy banana peppers, alongside the ammoglio sauce for dipping.
