    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove and let rest.

    Cook the Potatoes

    Boil the potatoes in salted water until they are tender, about 15-20 minutes. Drain and let cool slightly, then cut them into cubes.

    Cook the Sausage

    In the same pan used for the chicken, add the sausage. Cook until browned and cooked through, about 5-7 minutes. Remove from pan and slice.

    Prepare the Garlic-Wine Sauce

    In the pan, add the remaining olive oil and minced garlic. Sauté until fragrant, about 1 minute. Pour in the white wine and let simmer for 5-7 minutes until reduced by half.

    Combine Ingredients

    Add the potatoes, sliced sausage, and cherry peppers to the sauce. Stir to combine and heat through for about 3-5 minutes.

    Serve

    Slice the grilled chicken and place on a plate. Top with the potato and sausage mixture. Sprinkle with mozzarella cheese and fresh parsley. Serve warm.
