1. Prepare the Chicken
Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium heat and grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from the grill and let rest.
2. Cook the Potatoes
Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.
3. Sauté the Sausage and Peppers
In the same pan used for the chicken, add the remaining tablespoon of olive oil and sauté the crumbled Italian sausage until browned. Add the cherry peppers and cook for another 2-3 minutes.
4. Make the Garlic-Wine Sauce
Add minced garlic to the sausage and peppers, cooking until fragrant. Pour in the white wine and let it simmer for about 5 minutes, allowing the alcohol to evaporate.
5. Combine and Serve
Slice the grilled chicken and serve it over the boiled potatoes. Top with the sausage and pepper mixture, pour the garlic-wine sauce over, and sprinkle with mozzarella and fresh parsley.
