Prepare the Broccoli Rabe
Bring a large pot of salted water to a boil. Trim the ends of the broccoli rabe, and blanch in the boiling water for 2-3 minutes until bright green. Remove and plunge into ice water to stop cooking. Drain and chop into bite-sized pieces.

Cook the Sausage
In a large skillet, heat 2 tablespoons of EVOO over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté Garlic
In the same skillet, add another 2 tablespoons of EVOO. Add minced garlic and red pepper flakes, and sauté for about 30 seconds until fragrant.

Combine Ingredients
Add the blanched broccoli rabe and cooked sausage back to the skillet. Toss everything together and season with salt and black pepper to taste.

Cook the Pasta
Meanwhile, cook the orecchiette in the same pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Combine Pasta and Sauce
Add the drained orecchiette to the skillet with sausage and broccoli rabe. Toss everything together, adding reserved pasta water a little at a time until a cohesive sauce forms.

Serve warm, drizzled with a little extra EVOO if desired, and enjoy!
