Prepare Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Dredge each breast in breadcrumbs mixed with Parmesan cheese until fully coated.

Cook Chicken
Heat olive oil in a skillet over medium heat. Cook the breaded chicken breasts for about 4-5 minutes on each side until golden brown. Transfer them to a baking sheet and bake in the oven for 15-20 minutes until fully cooked.

Prepare Fries
While the chicken is baking, prepare the shoestring fries according to package instructions or fry fresh ones until crispy.

Assemble the Sandwich
Spread sriracha sauce on one side of each slice of Eddie's bread. Place the cooked chicken breast on one slice, top with a fried egg, and then close the sandwich with the other slice of bread.

Serve the sandwich hot with a side of shoestring fries.
