    Prepare the Vegetables

    Peel and slice the carrots, yellow squash, and zucchini into thin rounds. Mince the garlic.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add carrots, squash, and zucchini. Season with salt and pepper, and cook for about 5-7 minutes until tender.

    Cook the Salmon

    In the same skillet, push the vegetables to the side and place the salmon fillets skin-side down. Cook for 4-5 minutes on each side, or until the salmon is cooked through.

    Add Olives and Wine

    Once the salmon is cooked, add the black olives and white wine to the skillet. Allow it to simmer for about 3 minutes until the wine reduces slightly.

    Serve

    Garnish with fresh parsley and serve the salmon alongside the sautéed vegetables.
