    Make the Pie Crust

    In a large bowl, combine the flour, sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing until the dough holds together. Do not overwork the dough.

    Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the Filling

    In a large bowl, combine the fresh fruit, sugar, cornstarch, cinnamon, and lemon juice. Toss until the fruit is well-coated.

    Assemble the Pie

    Preheat the oven to 425°F (220°C). Roll out one disc of pie dough on a floured surface to fit your pie pan. Place it in the pan.

    Fill the crust with the prepared fruit mixture. Roll out the second disc of dough and place it over the filling. Seal the edges and cut slits in the top crust for steam to escape.
