Cannoli Preparation

Make the Pastry Dough
In a mixing bowl, combine the flour, granulated sugar, cocoa powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg yolk and white wine until a dough forms. Wrap in plastic wrap and refrigerate for at least 1 hour.

Roll and Cut the Dough
On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles or squares (about 4 inches in diameter) and wrap around cannoli molds, sealing the edges with a bit of water.

Fry the Shells
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the dough-wrapped molds until golden brown, about 3-5 minutes. Remove and let cool slightly before gently removing the shells from the molds.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Fill the Cannoli
Using a pastry bag, fill each cooled cannoli shell with the ricotta mixture.

Dip in Chocolate
Melt the chocolate chips in a microwave or double boiler. Dip the ends of each filled cannoli into the melted chocolate and let them set on a parchment-lined tray.

Serve the cannoli chilled or at room temperature, and enjoy!
