Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, 0.25 cup sugar, and melted unsalted butter. Mix until well combined.

Press the Crust
Press the crumb mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and set aside to cool.

Make the Filling
In a large bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and continue to beat until creamy. Add sour cream and vanilla extract, mixing well.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake for 60-70 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

Chill the Cheesecake
Refrigerate the cheesecake for at least 4 hours or overnight before serving.

Make Strawberry Sauce (optional)
In a saucepan, combine 2 cups of fresh strawberries, 0.5 cup of sugar, and 1 tablespoon of lemon juice. Cook over medium heat until the strawberries break down and the sauce thickens. Let cool.

Slice the cheesecake and serve with whipped cream and strawberry sauce on top.
