Brown the Sausage
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced Italian sausage and cook until browned, about 5 minutes. Remove and set aside.

Sear the Chicken
In the same skillet, add another tablespoon of olive oil. Season the chicken thighs with salt and black pepper. Place the chicken skin-side down in the skillet and sear until golden brown, about 7 minutes. Flip and cook for another 5 minutes.

Add Vegetables
Add the diced potatoes, minced garlic, sliced cherry peppers, and red pepper flakes to the skillet. Stir to combine.

Simmer
Pour in the chicken broth and bring the mixture to a simmer. Cover the skillet and cook for about 20 minutes, or until the chicken is cooked through and the potatoes are tender.

Finish and Serve
Stir in the browned sausage and chopped parsley. Adjust seasoning with salt and pepper to taste. Serve hot.
